Lentil Burritos



Of course, the downside of opening a 16 oz packet of Trader Joe's steamed lentils and only using 1/4 cup for Lentils on Garlic Toast with Greens, Beets, & Goat Cheese is reading the 'Refridgerate and consume within 2 days of opening' message on the package.

OK, so it's a 3 day lentils-o-rama challenge. Day 2 produced this divine Lentil burrito with onions, cumin seeds, poblano chile, rice, salsa, guacamole, topped with cilantro chutney and sour cream. Wrapped in a handmade flour tortilla, the cumin seeds made this dish a standout!

Next, think about a lentil salad. Toss the lentils with olive oil, vinegar and thinly sliced scallions. Pile them on top of (or underneath) some greens dressed with a slightly different flavor. Grab some rosemary blossoms if there are any in your garden or landscaping and sprinkle them over.

I adore lentil tacos/burritos... and am very intrigued by CC's mention of rosemary blossoms.. I've grown rosemary for years and have never seen a blossom!

how delish! i love this photo. the colors really go well together and it looks damn hearty at that!

i have a similar problem with cauliflower.. i find that when i buy it, i eat of for three days straight just to get rid of it before it goes bad!

cookie - I have a lot of blooming rosemary. I'll have to try this! this was delicious - I can't believe I've never done lentils with mexican flavours. This is one to build on.
